• Baking & Pastry Arts (AS)

    The International Baking & Pastry Institute® at JWU sets the global standard. In our two-year Baking & Pastry Arts associate degree program, you’ll be introduced to the techniques of producing artisan breads, classic pastry, pies, tarts and petits fours, celebration cakes, confections, and sugar and chocolate showpieces in our dedicated pastry and bread labs.

    Throughout the program, you’ll develop professionalism and proficiency in preparation procedures, production methods and presentation techniques for pastry, baked goods and desserts, as well as cost control and food safety.

    You’ll receive your own pastry tool kit with the latest smallwares, and study from two textbooks, written by JWU faculty, that have eliminated all use of trans fats.

    You’ll also take general arts and sciences and related professional studies classes that provide the critical thinking and communication skills necessary for long-term career development. You’ll then apply these learned skills through a term of real-work experience at an internship to build your résumé and industry contacts.
